Sesame Scallion Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 1 cup boiling water
  • ½ cup chopped scallions (green onions)
  • 2 tablespoons Toasted Sesame Oil
  • ½ teaspoon salt
  • 2 tablespoons vegetable oil (for cooking)
  • Soy sauce for dipping (optional)

Instructions

  • Place the flour in a large bowl.
  • Gradually add boiling water while stirring with chopsticks or a spatula until it forms a dough.
  • Knead the dough on a floured surface for about 5 minutes until it's smooth.
  • Cover the dough with a damp cloth and let it rest for 30 minutes.
  • Divide the dough into 4 equal parts.
  • Roll out one piece of dough into a circle about 8 inches in diameter.
  • Brush with a thin layer of sesame oil and sprinkle with salt.
  • Spread a quarter of the chopped scallions evenly over the circle.
  • Roll the dough into a tight log, then coil it into a spiral.
  • Flatten the spiral with a rolling pin to form a pancake about 1/4-inch thick.
  • Repeat with the remaining pieces of dough.
  • Heat vegetable oil in a large skillet over medium heat.
  • Cook each pancake for 2–3 minutes on each side, or until golden brown and crispy.
  • Add more oil to the skillet as needed between pancakes.
  • Cut the scallion pancakes into wedges and serve with soy sauce or your favorite dipping sauce.
