
Garlic Olive Oil Grissini

Ingredients:
- 2 cups all-purpose flour
- 1 tsp salt
- 1 tsp sugar
- 1 tsp instant yeast
- ⅓ cup Garlic Olive Oil from The Little Shop of Olive Oils
- ½ cup warm water (around 110°F)
- 1 tsp dried oregano (optional)
- 1 tbsp chopped fresh rosemary (optional)
- ¼ cup grated Parmesan cheese (optional)
- Coarse sea salt for sprinkling
Instructions:
- In a large bowl, mix the flour, salt, sugar, and yeast. Add the garlic olive oil and warm water. Mix until a dough forms. If needed, add a little extra water, one tablespoon at a time, until the dough comes together.
- Transfer the dough to a floured surface and knead for about 5 minutes until it becomes smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a kitchen towel, and let it rise for about 1 hour or until doubled in size.
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Punch down the dough and divide it into 24 small pieces. Roll each piece into a thin stick, about 8-10 inches long.
- Arrange the breadsticks on the baking sheet, leaving space between them. Brush with extra garlic olive oil, sprinkle with sea salt, and, if using, add rosemary, oregano, or Parmesan.
- Bake for 15-20 minutes, or until golden brown and crispy.
- Let them cool on a wire rack before serving. Enjoy with your favorite balsamic vinegar or dipping sauce!
