How to Choose Your EVOO

Choose by Intensity

A mild oil is lovely for baking, eggs and delicate fish. A robust oil brings a peppery finish to beans, soups and grilled meat.

Intensity describes flavor, not quality. A great kitchen often has one of each.

Read the Crush Date

Olive oil is a fresh fruit juice, and the crush date tells you how fresh. Our oils change with each harvest, about every six months, so read the current tasting notes on each bottle.

Try this at home: pour two oils over warm bread or plain potatoes. The differences jump out when nothing else competes.

Premium Extra Virgin Olive Oil FAQs

Can I cook with extra virgin olive oil?

Yes. Use it for sautéing, roasting and baking at normal home temperatures, and save your boldest bottle for drizzling at the end.

What does robust mean?

Robust is an intensity grade. It means more green, peppery flavor and a little tickle in the throat, not added heat.

Which bottle should I buy first?

Start with a mild or medium oil for everyday cooking. Add a robust one when you want a finishing oil with more character.
