
Honey-Glazed Walnut & Blue Cheese Crostini

Ingredients (Makes about 12 crostini):
- 1 small baguette, sliced into ½-inch rounds
- 2 tablespoons any of our Extra Virgin Olive Oils at The Little Shop
- 4 ounces blue cheese (such as Gorgonzola or Roquefort)
- 1 apple (e.g., Honeycrisp or Granny Smith), thinly sliced
- ½ cup walnut halves or pieces
- 3 tablespoons honey (plus extra for drizzling)
- A handful of fresh arugula leaves
- Salt and freshly ground black pepper (to taste)
Instructions:
- Preheat the oven to 350°F (175°C).
- Arrange the baguette slices on a baking sheet.
- Brush each slice lightly with olive oil and sprinkle with a pinch of salt.
- Bake for about 8–10 minutes, or until golden and crisp.
- While the crostini are in the oven, heat a small skillet over medium-low heat.
- Add the walnuts and toast them for 2–3 minutes, stirring occasionally to prevent burning.
- Drizzle in 3 tablespoons of honey and stir to coat the walnuts evenly.
- Remove from heat and set aside to let the honeyed walnuts cool slightly.
- Spread a generous layer of blue cheese on each crostini.
- Top with a thin slice of apple.
- Add a spoonful of the honey-glazed walnuts on top.
- Finish each crostini with a few leaves of arugula for a fresh peppery bite.
- Optional: Drizzle a little extra honey or a light sprinkle of freshly ground black pepper over the assembled crostini.
Serve immediately to enjoy the contrast of creamy cheese, crisp apple, and sweet, crunchy walnuts.
