Mediterranean Baked Feta Appetizer

Ingredients:
- 1 block of feta cheese
- 1 cup cherry tomatoes
- ½ cup mixed olives (green and black)
- 1 small bell pepper, sliced
- 2 cloves of garlic, thinly sliced
- 2 sprigs fresh rosemary
- ¼ cup Extra Virgin Olive Oil
- ½ tsp dried oregano
- ¼ tsp crushed red pepper flakes (optional)
- Freshly cracked black pepper, to taste
- Crusty bread, for serving
Instructions:
- Preheat your oven to 400ºF (200ºC).
- Place the block of feta in the center of a small baking dish.
- Arrange the cherry tomatoes, olives, bell pepper slices, and garlic around the feta.
- Drizzle everything generously with Olive Oil.
- Sprinkle with dried oregano, crushed red pepper flakes (if using), and a few grinds of black pepper.
- Lay the rosemary sprigs on top of the feta and veggies.
- Bake for 20-25 minutes, until the tomatoes are blistered, and the feta is soft and golden around the edges.
- Serve warm with crusty bread for dipping.
