Mediterranean Baked Feta Appetizer

Ingredients:

  • 1 block of feta cheese
  • 1 cup cherry tomatoes
  • ½ cup mixed olives (green and black)
  • 1 small bell pepper, sliced
  • 2 cloves of garlic, thinly sliced
  • 2 sprigs fresh rosemary
  • ¼ cup Extra Virgin Olive Oil
  • ½ tsp dried oregano
  • ¼ tsp crushed red pepper flakes (optional)
  • Freshly cracked black pepper, to taste
  • Crusty bread, for serving

Instructions:

  • Preheat your oven to 400ºF (200ºC).
  • Place the block of feta in the center of a small baking dish.
  • Arrange the cherry tomatoes, olives, bell pepper slices, and garlic around the feta.
  • Drizzle everything generously with Olive Oil.
  • Sprinkle with dried oregano, crushed red pepper flakes (if using), and a few grinds of black pepper.
  • Lay the rosemary sprigs on top of the feta and veggies.
  • Bake for 20-25 minutes, until the tomatoes are blistered, and the feta is soft and golden around the edges.
  • Serve warm with crusty bread for dipping.
