Pico de Gallo with a Twist

Ingredients:
- 4 ripe tomatoes, finely diced
- 1/2 red onion, finely chopped
- 1-2 jalapeno peppers, seeds removed and finely chopped (adjust to taste)
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
- Freshly ground black pepper to taste
Twist:
- 1 tablespoon The Little Shop garlic-infused olive oil
- 1 teaspoon The Little Shop pineapple balsamic vinegar
Instructions:
- In a medium bowl, combine the diced tomatoes, chopped red onion, and jalapeno peppers.
- Add the chopped cilantro and mix well.
- Drizzle the garlic-infused olive oil over the mixture.
- Squeeze the fresh lime juice into the bowl and mix until everything is evenly coated.
- Drizzle the pineapple balsamic vinegar over the Pico de Gallo.
- Season with salt and freshly ground black pepper to taste. Mix everything together gently.
- Taste your Pico de Gallo and adjust the seasoning if necessary. You can add more lime juice, salt, or pineapple balsamic for a sweeter taste.
Serve immediately with tortilla chips, or as a topping for tacos, grilled meats, or salads.
