Pineapple Balsamic and Garlic Olive Oil Crostini

Ingredients:
- 1 baguette, sliced into 1/2-inch-thick slices
- 3 tablespoons The Little Shop Garlic Olive Oil
- 1 cup fresh pineapple, diced into small cubes
- 2 tablespoons The Little Shop Pineapple Balsamic Vinegar
- 1 tablespoon honey
- 1/4 cup fresh basil, finely chopped
- 1/4 cup fresh parsley, finely chopped
- Salt and pepper to taste
- Fresh thyme leaves for garnish (optional)
Instructions:
- Preheat your oven to 375F
- Place the baguette slices on a baking sheet and brush each slice with Garlic Olive Oil.
- Toast the baguette slices in the preheated oven for 8-10 minutes, or until they are golden brown and crispy. Set aside to cool slightly.
- In a medium-sized bowl, combine the diced pineapple, Pineapple Balsamic Vinegar, honey, chopped basil, and parsley. Toss until the pineapple is evenly coated with the mixture.
- Season with salt and pepper to taste.
- Spoon a generous amount of the pineapple mixture onto each toasted baguette slice.
- Drizzle a little extra Pineapple Balsamic Vinegar over the top if desired for added flavor.
- Garnish with fresh thyme leaves for a finishing touch, if using.
Arrange the crostini on a serving platter and serve immediately as a refreshing appetizer.
