Sesame Scallion Pancakes

Ingredients
- 2 cups all-purpose flour
- 1 cup boiling water
- ½ cup chopped scallions (green onions)
- 2 tablespoons Toasted Sesame Oil
- ½ teaspoon salt
- 2 tablespoons vegetable oil (for cooking)
- Soy sauce for dipping (optional)
Instructions
- Place the flour in a large bowl.
- Gradually add boiling water while stirring with chopsticks or a spatula until it forms a dough.
- Knead the dough on a floured surface for about 5 minutes until it's smooth.
- Cover the dough with a damp cloth and let it rest for 30 minutes.
- Divide the dough into 4 equal parts.
- Roll out one piece of dough into a circle about 8 inches in diameter.
- Brush with a thin layer of sesame oil and sprinkle with salt.
- Spread a quarter of the chopped scallions evenly over the circle.
- Roll the dough into a tight log, then coil it into a spiral.
- Flatten the spiral with a rolling pin to form a pancake about 1/4-inch thick.
- Repeat with the remaining pieces of dough.
- Heat vegetable oil in a large skillet over medium heat.
- Cook each pancake for 2–3 minutes on each side, or until golden brown and crispy.
- Add more oil to the skillet as needed between pancakes.
- Cut the scallion pancakes into wedges and serve with soy sauce or your favorite dipping sauce.
