Dark Chocolate Balsamic Mousse at The Little Shop of Olive Oils

Dark Chocolate Balsamic Mousse

Ingredients:

  • 6 oz dark chocolate (70% cocoa or higher), chopped
  • 1 tbsp Dark Chocolate Balsamic Vinegar
  • 2 tbsp Butter Olive Oil (or unsalted butter)
  • 2 large egg yolks
  • 2 tbsp granulated sugar
  • 1 cup heavy cream (cold)
  • ½ tsp vanilla extract
  • A pinch of salt
  • Cocoa powder & fresh mint for garnish (optional)

Instructions:

  • In a heatproof bowl, melt the dark chocolate and butter olive oil over a double boiler (or microwave in 20-second intervals, stirring in between) until smooth.
  • Stir in the Dark Chocolate Balsamic Vinegar and set aside to cool slightly.
  • In a separate bowl, whisk together egg yolks, sugar, and salt until light and fluffy.
  • Slowly pour the melted chocolate into the egg mixture, stirring constantly.
  • Place the bowl over a simmering pot of water and whisk for 1-2 minutes until thickened. Remove from heat and let cool.
  • Using a hand mixer, beat cold heavy cream and vanilla extract until soft peaks form.
  • Gently fold the whipped cream into the chocolate mixture in two batches, being careful not to deflate the mousse.
  • Divide into serving dishes and chill for at least 2 hours before serving.
  • Dust with cocoa powder and garnish with fresh mint for a fancy touch.
