
Dark Chocolate Balsamic Mousse

Ingredients:
- 6 oz dark chocolate (70% cocoa or higher), chopped
- 1 tbsp Dark Chocolate Balsamic Vinegar
- 2 tbsp Butter Olive Oil (or unsalted butter)
- 2 large egg yolks
- 2 tbsp granulated sugar
- 1 cup heavy cream (cold)
- ½ tsp vanilla extract
- A pinch of salt
- Cocoa powder & fresh mint for garnish (optional)
Instructions:
- In a heatproof bowl, melt the dark chocolate and butter olive oil over a double boiler (or microwave in 20-second intervals, stirring in between) until smooth.
- Stir in the Dark Chocolate Balsamic Vinegar and set aside to cool slightly.
- In a separate bowl, whisk together egg yolks, sugar, and salt until light and fluffy.
- Slowly pour the melted chocolate into the egg mixture, stirring constantly.
- Place the bowl over a simmering pot of water and whisk for 1-2 minutes until thickened. Remove from heat and let cool.
- Using a hand mixer, beat cold heavy cream and vanilla extract until soft peaks form.
- Gently fold the whipped cream into the chocolate mixture in two batches, being careful not to deflate the mousse.
- Divide into serving dishes and chill for at least 2 hours before serving.
- Dust with cocoa powder and garnish with fresh mint for a fancy touch.
