
Herbes de Provence Peach Balsamic Tart

Ingredients
For the tart:
- 3–4 ripe peaches, thinly sliced (no need to peel)
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
1 tsp baking powder
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup Herbes de Provence Olive Oil
- 2 tbsp Peach Balsamic Vinegar
- 1 tsp vanilla extract
- Optional: 1/4 tsp almond extract
- Powdered sugar, for dusting
Optional glaze:
- 2 tbsp Peach Balsamic Vinegar
- 1 tbsp honey or apricot preserves
Instructions
- Preheat oven to 350°F. Lightly grease a 9-inch tart pan or pie dish with olive oil.
- Mix dry ingredients: In a bowl, whisk together flour, sugar, baking powder, and salt.
- Combine wet ingredients: In another bowl, whisk eggs, Herbes de Provence Olive Oil, Peach Balsamic, vanilla, and almond extract if using.
- Stir wet into dry until just combined. The batter will be thick.
- Spread batter evenly in your prepared pan.
- Arrange peach slices on top in a circular pattern.
- Bake for 35–40 minutes or until golden and a toothpick inserted in the center comes out clean.
- (Optional) Glaze: While warm, gently heat balsamic and honey or preserves. Brush over the peaches for a glossy finish.
- Cool slightly, dust with powdered sugar, and serve warm or at room temperature.
