Herbes de Provence Peach Balsamic Tart

Ingredients

For the tart:

  • 3–4 ripe peaches, thinly sliced (no need to peel)
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar

1 tsp baking powder

Optional glaze:

  • 2 tbsp Peach Balsamic Vinegar
  • 1 tbsp honey or apricot preserves

Instructions

  • Preheat oven to 350°F. Lightly grease a 9-inch tart pan or pie dish with olive oil.
  • Mix dry ingredients: In a bowl, whisk together flour, sugar, baking powder, and salt.
  • Combine wet ingredients: In another bowl, whisk eggs, Herbes de Provence Olive Oil, Peach Balsamic, vanilla, and almond extract if using.
  • Stir wet into dry until just combined. The batter will be thick.
  • Spread batter evenly in your prepared pan.
  • Arrange peach slices on top in a circular pattern.
  • Bake for 35–40 minutes or until golden and a toothpick inserted in the center comes out clean.
  • (Optional) Glaze: While warm, gently heat balsamic and honey or preserves. Brush over the peaches for a glossy finish.
  • Cool slightly, dust with powdered sugar, and serve warm or at room temperature.
