
Lychee Balsamic Bread Pudding

Ingredients:
For the Bread Pudding:
- 6 cups day-old bread, cubed (brioche or challah works best)
- 2 cups whole milk
- 1 cup heavy cream
- ½ cup sugar
- 3 eggs
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- ¼ cup Lychee Balsamic Vinegar
- ½ cup raisins or dried cherries (optional)
- ¼ cup chopped nuts (walnuts or pecans, optional)
For the Lychee Balsamic Glaze:
- ½ cup Lychee Balsamic Vinegar
- ¼ cup honey or maple syrup
- 2 tablespoons butter
- Pinch of salt
Instructions:
- Preheat oven to 350°F and grease a baking dish.
- In a large bowl, whisk together the milk, cream, sugar, eggs, vanilla, cinnamon, and Balsamic.
- Add cubed bread and let it soak for 10 to 15 minutes, stirring occasionally. Stir in raisins and nuts if using.
- Pour the mixture into the greased dish and bake for 40 to 45 minutes, until golden brown and set.
- While the pudding bakes, heat the Lychee Balsamic, honey, and butter in a small saucepan over medium heat.
- Simmer for 3 to 5 minutes until slightly thickened. Remove from heat and add a pinch of salt.
- Drizzle the warm Lychee Balsamic glaze over the bread pudding before serving.
