Lychee Balsamic Bread Pudding

Ingredients:

For the Bread Pudding:

  • 6 cups day-old bread, cubed (brioche or challah works best)
  • 2 cups whole milk
  • 1 cup heavy cream
  • ½ cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ¼ cup Lychee Balsamic Vinegar
  • ½ cup raisins or dried cherries (optional)
  • ¼ cup chopped nuts (walnuts or pecans, optional)

For the Lychee Balsamic Glaze:

Instructions:

  • Preheat oven to 350°F and grease a baking dish.
  • In a large bowl, whisk together the milk, cream, sugar, eggs, vanilla, cinnamon, and Balsamic.
  • Add cubed bread and let it soak for 10 to 15 minutes, stirring occasionally. Stir in raisins and nuts if using.
  • Pour the mixture into the greased dish and bake for 40 to 45 minutes, until golden brown and set.
  • While the pudding bakes, heat the Lychee Balsamic, honey, and butter in a small saucepan over medium heat.
  • Simmer for 3 to 5 minutes until slightly thickened. Remove from heat and add a pinch of salt.
  • Drizzle the warm Lychee Balsamic glaze over the bread pudding before serving.
