Walnut Oil and Fig Balsamic Butter Cookies

Ingredients:
- 1 cup unsalted butter (room temperature)
- 1/2 cup sugar
- 2 cups all-purpose flour
- 1/4 cup Walnut Olive Oil (from The Little Shop of Olive Oils)
- 1 tsp Fig Balsamic Vinegar (from The Little Shop of Olive Oils)
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 350. Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the Walnut Olive Oil, Fig Balsamic Vinegar, and vanilla extract to the butter mixture. Mix until well combined.
- Gradually add in the flour and salt, mixing until the dough comes together and is smooth.
- Using a cookie press or a piping bag fitted with a large star tip, pipe the dough onto the prepared baking sheet in small, flower-shaped or round patterns. You can also roll the dough into small balls and flatten them with a fork for a simple design.
- Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are lightly golden.
- Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Once the cookies have cooled, they can be dusted with powdered sugar if desired. Enjoy!
