
Sweet & Tangy Relish

Ingredients:
- 2 cups finely diced cucumbers (seeds removed)
- ½ cup finely diced onion (yellow or sweet)
- ½ cup finely diced green bell pepper
- ¼ cup Traditional Balsamic Vinegar
- ¼ cup of sugar (or honey for natural sweetness)
- 1 teaspoon salt
- ½ teaspoon mustard seeds
- ½ teaspoon celery seeds
- ¼ teaspoon ground turmeric (for color and mild earthiness)
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional for heat)
Instructions:
- Finely dice the cucumbers, onion, and bell pepper. If the cucumbers are very watery, lightly pat them dry with a paper towel.
- In a saucepan over medium heat, combine the balsamic vinegar, sugar, salt, mustard seeds, celery seeds, turmeric, black pepper, and red pepper flakes (if using). Stir and bring to a simmer.
- Add the diced vegetables to the saucepan and stir to coat them in the balsamic mixture. Reduce the heat to low and let the relish cook for 10-15 minutes, stirring occasionally, until the vegetables soften and absorb the balsamic glaze.
- Remove from heat and let the relish cool to room temperature. Transfer to a glass jar and store in the fridge for up to 2 weeks. The flavors will deepen over time!
- Use this relish on hot dogs, burgers, sandwiches, grilled meats, or as a sweet-tangy topping for cheese boards.
