Sweet & Tangy Relish

Ingredients:

  • 2 cups finely diced cucumbers (seeds removed)
  • ½ cup finely diced onion (yellow or sweet)
  • ½ cup finely diced green bell pepper
  • ¼ cup Traditional Balsamic Vinegar
  • ¼ cup of sugar (or honey for natural sweetness)
  • 1 teaspoon salt
  • ½ teaspoon mustard seeds
  • ½ teaspoon celery seeds
  • ¼ teaspoon ground turmeric (for color and mild earthiness)
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional for heat)

Instructions:

  • Finely dice the cucumbers, onion, and bell pepper. If the cucumbers are very watery, lightly pat them dry with a paper towel.
  • In a saucepan over medium heat, combine the balsamic vinegar, sugar, salt, mustard seeds, celery seeds, turmeric, black pepper, and red pepper flakes (if using). Stir and bring to a simmer.
  • Add the diced vegetables to the saucepan and stir to coat them in the balsamic mixture. Reduce the heat to low and let the relish cook for 10-15 minutes, stirring occasionally, until the vegetables soften and absorb the balsamic glaze.
  • Remove from heat and let the relish cool to room temperature. Transfer to a glass jar and store in the fridge for up to 2 weeks. The flavors will deepen over time!
  • Use this relish on hot dogs, burgers, sandwiches, grilled meats, or as a sweet-tangy topping for cheese boards.
