Blackberry Ginger Lime Grilled Shrimp
Ingredients:
- 1 lb large shrimp, peeled and deveined
- ¼ cup Persian Lime Olive Oil
- ¼ cup Blackberry Ginger Balsamic Vinegar
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1 teaspoon fresh ginger, grated
- Zest of 1 lime
- Juice of 1 lime
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon crushed red pepper flakes (optional for heat)
- Chopped fresh cilantro or parsley for garnish
Instructions:
- In a bowl, whisk together Olive Oil, Blackberry Balsamic, garlic, honey, ginger, lime zest, lime juice, salt, black pepper, and red pepper flakes.
- Add shrimp to the marinade and let sit for 30 minutes in the refrigerator.
- Thread shrimp on skewers and grill over medium-high heat for 2-3 minutes per side, or until opaque and slightly charred.
- Remove from the grill and garnish with chopped cilantro or parsley.
- Serve with grilled vegetables, rice, or a fresh salad.
