Blackberry Ginger Lime Grilled Shrimp

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • ¼ cup Persian Lime Olive Oil
  • ¼ cup Blackberry Ginger Balsamic Vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 teaspoon fresh ginger, grated
  • Zest of 1 lime
  • Juice of 1 lime
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon crushed red pepper flakes (optional for heat)
  • Chopped fresh cilantro or parsley for garnish

Instructions:

  • In a bowl, whisk together  Olive Oil, Blackberry Balsamic, garlic, honey, ginger, lime zest, lime juice, salt, black pepper, and red pepper flakes.
  • Add shrimp to the marinade and let sit for 30 minutes in the refrigerator.
  • Thread shrimp on skewers and grill over medium-high heat for 2-3 minutes per side, or until opaque and slightly charred.
  • Remove from the grill and garnish with chopped cilantro or parsley.
  • Serve with grilled vegetables, rice, or a fresh salad.
