Garlic Herb Gnocchi with Crispy Olive Oil Crumbs

Ingredients:

  • 1 lb. potato gnocchi (store-bought or homemade)
  • 3 tbsp Garlic Olive Oil
  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 tbsp chopped fresh parsley (plus extra for garnish)
  • 1 tsp dried Italian herbs or herb blend
  • Salt and freshly ground black pepper, to taste
  • Optional: drizzle of White Truffle Olive Oil or Lemon Olive Oil to finish

Instructions:

  • Cook the gnocchi according to package instructions until they float. Drain and set aside.
  • In a large skillet, heat 2 tbsp Garlic Olive Oil over medium heat. Add the breadcrumbs and sauté until golden brown and crispy, about 34 minutes.
  • Stir in the Parmesan, parsley, and Italian herbs, then season with salt and pepper. Remove from pan and set aside.
  • In the same skillet, add the remaining 1 tbsp Garlic Olive Oil and the cooked gnocchi. Sauté for 23 minutes until lightly golden and crisp on the outside.
  • Toss the crispy breadcrumbs back into the pan with the gnocchi and mix well to coat.
  • Serve warm, garnished with fresh parsley and an optional drizzle of White Truffle or Lemon Olive Oil for extra richness.
