
Garlic Herb Gnocchi with Crispy Olive Oil Crumbs

Ingredients:
- 1 lb. potato gnocchi (store-bought or homemade)
- 3 tbsp Garlic Olive Oil
- ½ cup panko breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 tbsp chopped fresh parsley (plus extra for garnish)
- 1 tsp dried Italian herbs or herb blend
- Salt and freshly ground black pepper, to taste
- Optional: drizzle of White Truffle Olive Oil or Lemon Olive Oil to finish
Instructions:
- Cook the gnocchi according to package instructions until they float. Drain and set aside.
- In a large skillet, heat 2 tbsp Garlic Olive Oil over medium heat. Add the breadcrumbs and sauté until golden brown and crispy, about 3–4 minutes.
- Stir in the Parmesan, parsley, and Italian herbs, then season with salt and pepper. Remove from pan and set aside.
- In the same skillet, add the remaining 1 tbsp Garlic Olive Oil and the cooked gnocchi. Sauté for 2–3 minutes until lightly golden and crisp on the outside.
- Toss the crispy breadcrumbs back into the pan with the gnocchi and mix well to coat.
- Serve warm, garnished with fresh parsley and an optional drizzle of White Truffle or Lemon Olive Oil for extra richness.
