
Garlic Olive Oil Frittata with Cherry Tomatoes & Herbs

Ingredients:
- 6 large eggs
- ¼ cup milk (or cream for a richer texture)
- 2 tbsp Garlic Olive Oil (from The Little Shop of Olive Oils)
- ½ cup shredded cheese (cheddar, mozzarella, or feta)
- ½ cup cherry tomatoes, halved
- ¼ cup fresh parsley or basil, chopped
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp red pepper flakes (optional, for a slight kick)
Instructions:
- Set your oven to 375°F (190°C).
- In a bowl, whisk together eggs, milk, salt, black pepper, and red pepper flakes.
- Heat Garlic Olive Oil in a cast-iron skillet over medium heat. If desired, sauté some diced onions or spinach for extra flavor.
- Pour the egg mixture into the skillet, letting it cook undisturbed for 2-3 minutes until the edges start to set.prinkle the shredded cheese over the eggs, followed by cherry tomatoes and fresh herbs.ransfer the skillet to the oven and bake for 12-15 minutes, or until the frittata is fully set and slightly golden on top.
Let it cool slightly before slicing. Drizzle with an extra splash of Garlic Olive Oil for a flavor boost!
