Hearty Garlic Beef Stroganoff

Ingredients:

  • 2 tablespoons olive oil (Garlic Olive Oil works great)
  • 1 ½ pounds beef sirloin or tenderloin, thinly sliced into strips
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 10 oz mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 cup sour cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish
  • Egg noodles or pasta of your choice

Instructions:

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the beef strips in batches, searing until browned on both sides. Remove and set aside.
  • In the same skillet, add the remaining tablespoon of olive oil.
  • Sauté the chopped onions until they become translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Stir in the sliced mushrooms and cook until they release their moisture and become tender.
  • Sprinkle the flour over the sautéed vegetables, stirring well to coat them evenly.
  • Gradually pour in the beef broth while stirring continuously to prevent lumps.
  • Bring the mixture to a simmer, allowing it to thicken slightly.
  • Lower the heat and stir in the sour cream, Dijon mustard, and Worcestershire sauce.
  • Return the seared beef strips to the skillet, mixing them into the sauce.
  • Simmer gently for 5-10 minutes until the beef is tender and the flavors meld together.
  • Season with salt and pepper to taste.
  • Cook the egg noodles or pasta according to the package instructions and drain.
  • Serve the Beef Stroganoff over the hot noodles or pasta.
  • Garnish with freshly chopped parsley.
