Hearty Garlic Beef Stroganoff

Ingredients:
- 2 tablespoons olive oil (Garlic Olive Oil works great)
- 1 ½ pounds beef sirloin or tenderloin, thinly sliced into strips
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 10 oz mushrooms, sliced
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 cup sour cream
- 2 tablespoons Dijon mustard
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
- Egg noodles or pasta of your choice
Instructions:
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the beef strips in batches, searing until browned on both sides. Remove and set aside.
- In the same skillet, add the remaining tablespoon of olive oil.
- Sauté the chopped onions until they become translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in the sliced mushrooms and cook until they release their moisture and become tender.
- Sprinkle the flour over the sautéed vegetables, stirring well to coat them evenly.
- Gradually pour in the beef broth while stirring continuously to prevent lumps.
- Bring the mixture to a simmer, allowing it to thicken slightly.
- Lower the heat and stir in the sour cream, Dijon mustard, and Worcestershire sauce.
- Return the seared beef strips to the skillet, mixing them into the sauce.
- Simmer gently for 5-10 minutes until the beef is tender and the flavors meld together.
- Season with salt and pepper to taste.
- Cook the egg noodles or pasta according to the package instructions and drain.
- Serve the Beef Stroganoff over the hot noodles or pasta.
- Garnish with freshly chopped parsley.
