Spicy Chicken Kebobs

Ingredients:
- 1 pound chicken breast (cut into 1-inch cubes)
- ½ cup Chipotle Extra Virgin Olive Oil (or Baklouti if you like it hot!)
- 1 Tablespoon Pineapple Balsamic Vinegar
- 1 tsp salt
- 3/4 cup white wine or beer
- Microgreens for garnish
- Green chili peppers for garnish (sliced thin)
Instructions:
- In a bowl, combine all ingredients and mix to coat.
- Marinate for at least 1 hour or overnight
- When ready to skewer the meat, preheat gas grill to medium-high heat
- Skewer meat and salt
- Grill for 4-5 minutes on both sides, flipping once, until meat is cooked
- Plate with garnish of microgreens and peppers
- Serve immediately
