Arugula Pear & Walnut Salad

Ingredients:
- 5 oz fresh arugula
- 2 ripe pears, thinly sliced
- 1/3 cup crumbled blue cheese (or goat cheese)
- 1/3 cup candied or toasted walnuts
- 2 tbsp Extra Virgin Olive Oil
- 1 tbsp Cranberry Pear Balsamic Vinegar
- 1 tsp Franklin Raw Honey
- Salt and freshly cracked black pepper to taste
Instructions:
- Place the fresh arugula in a large salad bowl. Arrange the pear slices on top.
- Sprinkle the crumbled blue cheese and walnuts evenly over the salad.
- In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, honey, and a pinch of salt and pepper until well combined.
- Drizzle the dressing over the salad just before serving. Toss gently to combine, if desired.
- Serve immediately for a fresh and flavorful dish that's perfect as a side or light main course.
