Mediterranean White Bean Salad

Ingredients:

  • 2 cups cooked or canned white beans, drained and rinsed (e.g., cannellini or butter beans)
  • 1 medium red bell pepper, diced
  • 2 medium tomatoes, diced
  • 1 small red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped (optional)
  • 2 tablespoons extra virgin olive oil from The Little Shop
  • 1 tablespoon red wine vinegar or lemon juice
  • 1/2 teaspoon garlic powder or 1 small clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Optional Add-ins:

  • Crumbled feta cheese
  • Kalamata olives, sliced
  • Baby arugula or spinach for added greens

Instructions:

  • In a large mixing bowl, combine the white beans, diced red bell pepper, tomatoes, and red onion.
  • Toss in the parsley and dill, if using.
  • In a small bowl, whisk together the olive oil, red wine vinegar or lemon juice, garlic, oregano, salt, and pepper.
  • Pour the dressing over the bean mixture and gently toss to coat all ingredients evenly.
  • Taste the salad and adjust the seasoning as needed with more salt, pepper, or lemon juice. Serve immediately or let it sit for 15-30 minutes to allow the flavors to meld together.
