
Zesty Orchard Salad

Ingredients:
- 5 oz mixed baby greens or spring mix
- 2 ripe peaches, sliced
- ¼ cup red onion, thinly sliced
- ⅓ cup pecan halves (toasted, if preferred)
- ¼ cup crumbled feta or goat cheese
For the Dressing:
- 2 tbsp Persian Lime Olive Oil
- 1 tbsp Blackberry Ginger Balsamic
- 1 tsp Dijon mustard
- 1 tsp honey (optional)
- Pinch of salt and pepper
Instructions:
- In a small bowl or jar, whisk together the Persian Lime Olive Oil, Blackberry Ginger Balsamic, Dijon mustard, honey (if using), salt, and pepper until smooth.
- In a large salad bowl, layer the greens, peach slices, red onion, pecans, and cheese.
- Drizzle with the dressing just before serving and toss gently.
