Cilantro Lime Rice at The Little Shop of Olive Oils

Cilantro Lime Rice

Ingredients:

  • 1 cup jasmine or basmati rice
  • 1 ¾ cups water or low-sodium vegetable broth
  • 1 tbsp Persian Lime Olive Oil
  • ½ tsp salt
  • 1 tbsp fresh lime juice
  • ½ tsp lime zest
  • ¼ cup fresh cilantro, chopped

Instructions:

  • Rinse the rice under cold water until the water runs clear. In a medium saucepan, bring the water (or broth) to a boil. Add the rice, Persian Lime Olive Oil, and salt. Stir, reduce heat to low, cover, and let simmer for about 15 minutes, or until the liquid is absorbed.
  • Remove the rice from heat and let it sit, covered, for 5 minutes. Fluff with a fork and stir in the lime juice, lime zest, and fresh cilantro.
  • Taste and adjust seasoning if needed. Serve warm alongside your favorite dishes like tacos, grilled meats, or seafood!
