Classic Olive Oil Focaccia

  • In a large mixing bowl, combine the baking mix, yeast, warm water, olive oil, and salt. Stir until a soft dough forms.
  • Cover the bowl with a clean towel and let the dough rise in a warm place for 1 hour or until doubled in size.
  • Transfer the dough to a oiled cast iron skillet. Gently press it into a round shape, about ½-inch thick.
  • Cover and let the dough rest for another 30 minutes.
  • Preheat the oven to 400°F. Use your fingertips to press dimples into the dough. Drizzle with olive oil and sprinkle coarse sea salt over the top. Add onions and olives if using.
  • Place in the oven and bake for 20-25 minutes or until golden brown.
  • Let cool slightly before slicing. Serve with olive oil and balsamic vinegar for dipping!
