
Classic Olive Oil Focaccia

Ingredients:
- 1 package The Little Shop Classic Baking Mix
- 2 tsp instant yeast (included in the Mix)
- 1 ¼ cups warm water (about 110°F)
- ¼ cup Extra Virgin Olive Oil at The Little Shop, plus more for drizzling
- 1 tsp salt
- ½ tsp coarse sea salt (for topping)
- Optional: onions and chopped olives
Instructions:
- In a large mixing bowl, combine the baking mix, yeast, warm water, olive oil, and salt. Stir until a soft dough forms.
- Cover the bowl with a clean towel and let the dough rise in a warm place for 1 hour or until doubled in size.
- Transfer the dough to a oiled cast iron skillet. Gently press it into a round shape, about ½-inch thick.
- Cover and let the dough rest for another 30 minutes.
- Preheat the oven to 400°F. Use your fingertips to press dimples into the dough. Drizzle with olive oil and sprinkle coarse sea salt over the top. Add onions and olives if using.
- Place in the oven and bake for 20-25 minutes or until golden brown.
- Let cool slightly before slicing. Serve with olive oil and balsamic vinegar for dipping!
