
Honey Balsamic Glazed Carrots with Herbs

Ingredients:
- 1 lb. baby carrots, peeled
- 2 tbsp Garlic Olive Oil
- 1 ½ tbsp Honey
- 1 tbsp Vermont Maple Balsamic Vinegar
- 1 tsp fresh thyme or dill
- Salt and pepper, to taste
Instructions:
- Preheat oven to 400ºF (200ºC). Line a baking sheet with parchment paper.
- In a bowl, toss the carrots with olive oil, honey, balsamic vinegar, thyme (or dill), salt, and pepper until evenly coated.
- Spread the carrots on the baking sheet in a single layer.
- Roast for 25–30 minutes, stirring halfway through, until the carrots are tender and caramelized at the edges.
- Transfer to a serving dish and drizzle with a touch more balsamic if desired. Garnish with fresh herbs.
- Serve warm and enjoy the perfect blend of savory, sweet, and tangy flavors.
