Honey Balsamic Glazed Carrots with Herbs

Instructions:

  • Preheat oven to 400ºF (200ºC). Line a baking sheet with parchment paper.
  • In a bowl, toss the carrots with olive oil, honey, balsamic vinegar, thyme (or dill), salt, and pepper until evenly coated.
  • Spread the carrots on the baking sheet in a single layer.
  • Roast for 2530 minutes, stirring halfway through, until the carrots are tender and caramelized at the edges.
  • Transfer to a serving dish and drizzle with a touch more balsamic if desired. Garnish with fresh herbs.
  • Serve warm and enjoy the perfect blend of savory, sweet, and tangy flavors.
