Sweet Potato Kale Salad Recipe at The Little Shop of Olive Oils

Sweet Potato Kale Salad

INGREDIENTS:

INSTRUCTIONS:

  • Preheat the oven to 375 degrees.
  • Add chopped kale to a large bowl and top with lime juice and the 2 Tbsp of EVOO. Use clean hands to massage for about 3 minutes to soften the leaves and infuse the leaves with the oil and lime juice. A pinch of salt added near the end of massaging adds even more flavor.
  • Whisk 1 Tbsp garlic oil, honey and salt and pepper in a small bowl until emulsified.
  • Clean and slice the sweet potatoes into ¼” discs.
  • Toss potatoes with 2 Tbsp of the garlic oil and salt and pepper
  • Lay in a single layer on a parchment lined baking sheet and roast until golden brown (about 30 minutes)
  • Divide kale onto 4 large plates and top with warm, roasted sweet potatoes and crushed pistachios. 
  • Drizzle a small amount of dressing and top with desired protein. Serve with lime slices for an additional zing
