Herb Crusted Salmon

Ingredients:
- 4 salmon fillets (6 oz each)
- 2 tbsp Extra Virgin Olive Oil
- 2 tbsp Dijon mustard
- ¼ cup panko breadcrumbs
- ¼ cup fresh parsley, chopped
- 1 tsp lemon zest
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400ºF (200ºC) and line a baking sheet with parchment paper.
- In a small bowl, combine the panko breadcrumbs, chopped parsley, lemon zest, a pinch of salt, and freshly ground pepper. Drizzle in 1 tablespoon of EVOO and mix well to coat the crumbs lightly.
- Pat the salmon fillets dry and brush them generously with the remaining EVOO. Spread a thin layer of Dijon mustard on top of each fillet.
- Press the breadcrumb mixture firmly onto the mustard-coated side of the salmon to create an even crust.
- Place the salmon fillets on the prepared baking sheet and bake for 12–15 minutes, or until the salmon is cooked through and the crust is golden brown.
- Serve warm alongside the citrus salad for a fresh, flavorful pairing that highlights the quality of your EVOO.
