Blueberry, Tomato, & Feta Salad

Ingredients:
- 4 cups mixed greens (like arugula, spinach, and romaine)
- 1 cup fresh blueberries
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/4 cup dried cranberries
- 1/4 cup sliced almonds (optional)
- 3 tablespoons Premium Extra Virgin Olive Oil
- 1 tablespoon Traditional Dark Balsamic Vinegar
- Salt and freshly ground black pepper, to taste
- 1 teaspoon Franklin Raw Honey or maple syrup (optional, for sweetness)
Instructions:
- In a large salad bowl, combine the mixed greens, fresh blueberries, cherry tomatoes, crumbled feta cheese, dried cranberries, and sliced almonds if using.
- In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, and honey or maple syrup if you prefer a touch of sweetness. Season the dressing with salt and pepper to taste.
- Drizzle the dressing over the salad and toss gently to combine, ensuring all the ingredients are lightly coated.
- Serve the salad immediately, or chill for about 15 minutes in the refrigerator before serving to allow the flavors to meld.
